Ingredients

  • 2 fresh Ahi Tuna steaks
  • 1 tbsp toasted sesame oil
  • ¼ cup sesame seeds mix of black and white
  • ½ tsp garlic powder plus salt and pepper to taste
  • 1 tbsp avocado oil or grape seed oil for high-heat searing
  • Optional tbsp of butter

Instructions

  • Prep the Tuna: Pat the tuna steaks completely dry with a paper towel and season lightly with salt, pepper, and garlic powder. Rub them lightly with sesame oil.
  • Create the Crust: Spread your sesame seeds on a shallow plate. Press each tuna steak into the seeds so the outside is completely coated.
  • Sear: Heat a skillet (cast iron or stainless steel) over medium-high heat until it's very hot. Add your avocado or grape seed oil. Optional, also add a small amount of butter to help it brown and for flavor.
  • Cook: Carefully place the steaks into the hot pan. Depending on the thickness, sear for 45 to 90 seconds on the first side to get a nice crust, then flip and sear for another 45 to 90 seconds for a perfect medium-rare center.
  • Serve: Remove from the pan and let the steaks rest for 2-3 minutes. Slice thinly against the grain using a very sharp knife, and serve immediately with your soy sauce mixture.
