High-Protein Cottage Cheese Veggie Scramble
This high-protein breakfast includes eggs, cottage cheese,bell peppers, spinach, and green onion for a nutritious and filling meal.

- 2 large eggs
- 1 egg white can use the egg white from carton
- ½ cup cottage cheese
- ½ cup bell peppers diced
- ½ cup fresh spinach chopped
- 1 green onion sliced
- 1 teaspoon olive oil
- Salt and pepper to taste
Whisk the eggs and egg white together.
Heat oil in a skillet over medium heat.
Add bell peppers and cook until softened.
Add spinach and green onion; cook until wilted.
Pour in eggs and allow to partially set.
Gently scramble until almost cooked.
Fold in cottage cheese and finish cooking.
Season and serve hot.
