High-Protein Cottage Cheese Veggie Scramble

This high-protein breakfast includes eggs, cottage cheese,bell peppers, spinach, and green onion for a nutritious and filling meal.

Ingredients

  • 2 large eggs
  • 1 egg white can use the egg white from carton
  • ½ cup cottage cheese
  • ½ cup bell peppers diced
  • ½ cup fresh spinach chopped
  • 1 green onion sliced
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Instructions

  • Whisk the eggs and egg white together.
  • Heat oil in a skillet over medium heat.
  • Add bell peppers and cook until softened.
  • Add spinach and green onion; cook until wilted.
  • Pour in eggs and allow to partially set.
  • Gently scramble until almost cooked.
  • Fold in cottage cheese and finish cooking.
  • Season and serve hot.
