Equipment

Ingredients

  • 2 cups Heavy Cream
  • 2 cups Whole Milk
  • 3/4 cup Granulated Sugar
  • 2 tsp Vanilla Extract
  • Pinch of Salt

Instructions

Mix

  • In a large bowl, whisk all ingredients together until the sugar is completely dissolved.

Chill

  • For best results, chill the mixture in the refrigerator for at least 30–60 minutes before churning.

Churning in an Elite Gourmet Wooden Bucket

  • Prepare Canister: Fill the metal canister no morethan 2/3 full to allow for expansion.
  • The "Salt & Ice"Layering: Place thecanister in the wooden bucket and lock the motor. Layer about 2 inches ofcrushed ice around the canister, followed by a generous sprinkle of RockSalt.
  • Maintain the Mix: Continue alternating ice and saltuntil it reaches the top of the canister. Add about 1 cup of cold water to thebucket to help the salt melt and start the freezing process.
  • The Churn: Plug in the motor. Churningtypically takes 30 to 45 minutes. The machine is done when themotor begins to struggle or stops completely.
  • Harden: The ice cream will be"soft-serve" consistency. For scoopable ice cream, transfer to anairtight container and freeze for at least 4 hours
